100g butter
1 cup castor sugar
2 eggs
1 cup self-raising flour
1/2 cup plain flour
1/2 cup milk
1/2 tsp salt
topping
rind and juice 1 large lemon
1/2 cp castor sugar (or less)
cream butter and sugar, add eggs, and rind, beat well.
Add dry ingredients alternately with milk
Bake 180°C 40 - 45mins in a ring tin or loaf
Remove from tin
Pour over the topping.
