1 heaped cup dry buckwheat or bulgar
cover with boiling water and leave for half an hour or more.
Strain, rinse and shake until fairly dry.
Place in large bowl, and add the following:
1 bunch spring onions - finely chopped
OR 1 medium red onion
2 - 3 tomatoes - coarsely chopped
1 green pepper - chopped
1 bunch parsley - finely chopped
1 bunch fresh mint - finely chopped
Seasonings - kelp and black pepper
1 small container cottage cheese
Approx 1/4 cup lemon juice
and 1/4 cup cold-pressed oil
Mix all ingredients and chill before serving
